Buffalo Chicken Dip

 

This is one of my husband’s all-time favorite recipes. It started as a special occasion recipe and now it’s morphed into something that we’ll have for dinner just because we love it. You can easily make a quick meal out of it and balance it out with fresh veggie strips or a crisp salad.




I like to lighten it up a little and we’ve been cutting back on the amount of meat our family consumes. So, I cut back the chicken and add a can of beans. I actually add a can of beans to just about anything that I’m trying to give a little more nutritional credibility to. I add beans to taco meat, spaghetti sauce, and anywhere else I can sneak them in. And why not? They add protein and fiber, and most of the time, no one even notices the addition.




This basic recipe really just has three ingredients, can be made in under 10 minutes and is delicious just like it is. But I like to add a few things to make it just right. First grab a couple of bars of cream cheese, unwrap and put in a microwavable bowl. Add 1/3 of a cup of hot sauce. In the South we love Texas Pete. If you’ve never had it and you see it around - grab some or you can order it from Amazon here. You won’t be sorry. You can use which ever hot sauce you are fond of and you can even add more than 1/3 of a cup.

Microwave for 2 minutes and 30 seconds, pull it out and stir. Add shredded chicken. The chicken can be cooked however you like. I’ve used leftover grilled chicken, rotisserie, baked or chicken boiled in chicken stock. Do what you like. It’ll be fine.





4 Ingredient Buffalo Chicken Dip


2 – Bars of Light Cream Cheese (8 oz.)

1/3 c. of Hot Sauce (We love Texas Pete)

1 ½ c. Shredded or Chopped Chicken

1 Can of Pinto Beans


========= MIX INS ===========


· 1 Can of Cannelloni Beans, Black Beans or Pintos

· Handful of cheese. Mexican cheese is great if you have it, but don’t over think it. Cheddar is good too. Bleu cheese crumbles are my favorite though.

· 1/3 of a cup of ranch or bleu cheese dressing

· ½. t. of Cayenne Powder

· If you are a celery lover, you might like a handful of chopped celery


Add cream cheese and hot sauce to a microwave safe bowl. Cover to avoid splatters. Heat for 2 minutes and 30 seconds, pull out and stir. Add chicken, any add ins and put back into the microwave until hot, approximately 2 minutes.

Serve with celery sticks, carrots, tortilla chips or crackers!
